Recipe Of The Week: Watermelon Salad

I would never think to put all of these ingredients together to make a salad, but then again, that's why I'm not one of Central Florida's most popular chefs! But you know who is? Chef Josh Oakley from 1921 Mount Dora and this week, he shared his secret recipe for his watermelon salad!

Watermelon Salad
Yield: 2-4 servings
1 small seedless watermelon, diced in 1 1/2-inch pieces
1 small red onion, julienned as thin as possible
4 ounces fresh basil, stem removed and leaves roughly chopped
Coarse salt for serving
1 cup apple cider vinegar
3/4 cup granulated sugar
2 tablespoons crushed red pepper flakes
  1. For the dressing, whisk the vinegar and sugar until the sugar is completely dissolved. Whisk in the crushed red pepper flakes. Stir covered until ready to use. (This dressing is best if made several hours ahead of time to allow the chili flakes to infuse with the liquid.)
  2. For the salad, gently toss watermelon, onion, and basil with the dressing.  Refrigerate at least an hour, or up to 24 hours. Sprinkle liberally with very coarse salt just before serving.
