Beer Cheese Dip

If there's one thing I will never give up in life, it's cheese. But have I told you how much cheese and beer goes well together? OK OK let me start!

First off, you already know I'm a meat and cheese, charcuterie board , savory, person . 99% of the time I will always chose that over sweets. So when I have my get togethers, I always make sure there's enough cheese, veggies, and meats.

Well my husband decided he's going to have a few friends over and I KNEW they would just love this beer cheese dip I found. Game days, boys, beer cheese, makes husband a happy camper. Happy Spouse, Happy House, right?

So let's get started with this super simple recipe! By the way it takes 15 minutes to make.... that alone is amazing.

Here's what you'll need.....
-2 Tbsp unsalted butter
-3 Tbsp. all-purpose flour
-3/4 cup milk, divided
-1/2 cup of your favorite beer
-1 tsp. dijon mustard
-1/4 tsp. garlic powder
-1/4 tsp. salt
-1/8 tsp. cayenne pepper
-3 cups shredded extra sharp cheddar cheese (you can use mild cheddar too, your preference)

Melt your butter in a medium sauce pan over medium. Once melted, mix in the flour with a whisk. Take your pan off of the heat and whisk in 2 tablespoons of milk until it becomes smooth. Keep whisking in the milk little by little until it smoothes out with the rest of it.

Now, stir in the beer, dijon, garlic powder, salt and cayenne. Return the saucepan to medium heat, and keep stirring it until it gets thick and starts to bubble, about 2-3 minutes. Remove from heat. Now we add the cheese! Whisk in one handful at a time, you can whisk until its melted and then add another, no need to rush greatness. And you're always welcome to add more garlic, salt, spices, etc. to your liking!

This pairs so good with a fresh cut baguette, fresh veggies, pretzels, crackers, or even apples.
