Full disclosure: I’m not really a cook. I’ve always been a “I know how to make spaghetti and macaroni and cheese” type of cook. However, I’m trying to better myself during quarantine. So I’m starting slow. This recipe is simple and easy, and even I couldn’t screw it up. Bell pepper tacos!
Step 1: cut your bell peppers in half and get rid of the stems and seeds. Pop them in the oven at 400 degrees for ten minutes.
Step 2: while they are cooking, take 3 cups of meat and season with salt and pepper. Brown on the stove.
Step 3: take the meat and stuff the bell peppers with it. Top off with shredded cheddar cheese. Pop back in the oven for 10 more minutes.
Step 4: take out, top with more cheese, sour cream, cilantro and pico and enjoy!
